| This study is aimed at studying linguistic and cultural features of words and phrases denoting cuisine in English with reference to their Vietnamese equivalents to help the process of teaching – learning English effectively.This study finds out some major points such as,
In terms of syntactic features:
For similarities, there are some marks such as firstly, word structures, words and phrases denoting cuisine can be free morphemes which can stand alone. Secondly, types of words, words and phrases denoting cuisine are classified into simple words and complex words (compound words). Thirdly, word classes, words and phrases denoting cuisine belong to nouns, noun phrases. Finally, syntactic functions, both English and Vietnamese adjectives have the same sytactic functions. These functions are attributive adjective, predicative adjective, noun pre-modifiers, noun post-modifiers.
Besides, the similarities above, it also has the followng differences. Firstly, Vietnamese words and phrases denoting cuisine are classified into complex words (reduplicative words) connoting emotive, evaluative, attitudinal hues of meaning, but there are no English ones. Secondly, English words and phrases denoting cuisine have plural forms. However, there are no Vietnamese ones. Moreover, in Vietnamese, verbs are denoted in dishes and drinks, cơm rang, but there are no ones in English. Finally, in English, there are 3 kinds of word formation and 17 kinds of noun phrases, but in Vietnamese, there are only 2 kinds of word formation and 12 kinds of noun phrases.
In terms of semantic features:
For similarities, firstly, both English and Vientmases have two categories cuisine denoting animals and plants from cultural features through cuisine denote animals such as all the body of animals; the parts of animals (includes both internal and external organs of animals), cuisine denoting animals combine with spices, cuisine denoting animals combine cooking methods, cuisine denoting plants, cuisine denoting plants combine with spices, cuisine denoting plants combine with cooking methods, cuisine denoting animals or plants combine with cooking methods and animals or plants, cuisine denoting areas, cuisine denoting combines names of man, cuisine denoting animals or plants combine with colour, and cuisine denoting animals or plants combine with flavour.
For differences, in English, there are 12 features, in Vietnamese, there are 13 features.Vietnamese has the cuisine denoting animals or plants combine with quality, but English has no one.
In terms of cultural features:
For similarities, firstly, the meals are divided into three basic meals, including breakfast, lunch and dinner, and dessert is the last course after the main meal. Secondly, majority of English and Vietnamese breakfast inclined to two tendencies: Traditional meal (self-cooking) and continental breakfast (fast food). Thirdly, lunch foods and places are various. Next, dinner is highly respected meal – a hot meal. Furthermore, the dessert is common both English and Vietnamese. Finally, drinks are common both English and Vietnamese, namely, tea, alcohol, beer and soft drinks. Drinking them is a way to relax, entertain and share with guests for conversations in daily life.
For differences, firsly, meal time because of different time zone. Secondly, culture decides dieting of each nation, English is descended from the pastoral civilization, so English meals are mainly meat than vegetables. However, Vietnamese is descended from the rice argriculture civilization. Therefore,Vietnamese meals are inclined to plants than animals (meat). Next,Vietnamese often add some ice to the dessert when having because of the weather is very hot in summer, but English people do rarely it. Finally, in Vietnamese, drinking a cup of tea, alcohol, beer or soft drinks every trouble, sadness go with the wind. Alcohol is not only common drink but also a particular one to worship on ceremony or special occasion, but the English do not have the same opinion with the Vietnamese.
In the end, the research worked out the answers to the three research questions, namely, explore linguistic and cultural features of words and phrases denoting cuisine in English with reference to their Vietnamese equivalents, find the similarities and differences of words and phrases denoting English cuisine and their Vietnamese equivalents in order to highlight linguistic and cultural elements and help the process of teaching – learning English effectively.
